Coconut Pandan Sticky Rice
Ingredients
2 Cups of Nagasari Pulut Susu ERA Rice, soak for 8 hours, or overnight
2 cups of coconut milk
1/4 cup cane sugar
1/2 tsp Salt
3 Tablespoons of Water
2 pandan leaves
2-3 Drops Pandan Extract
1 teaspoon corn flour
Seasoning:
1 tablespoon toasted sesame seeds
A handful of grated coconut
Directions
Wash the Nagasari Pulut Susu ERA rice several times until the water is clear. Soak the rice for 8 hours, or overnight. Rinse the rice again and strain well.
Steam the glutinous rice in a steamer.
In a small saucepan, combine coconut milk, cane sugar, salt, and pandan leaves and heat over low heat for a few minutes. Then pour half the liquid with the rice and mix until well combined.
Pour a generous amount of sweet coconut sauce. Sprinkle with grated coconut and toasted sesame seeds.
